Okay my friends, I found two new recipes last week that I am dying over. My husband and I had some fun and thought we would try these tasty healthy dishes.
The first one we tried was Black Bean Soup
3 15 oz cans of black beans, drained and rinsed
1 3/4 cups vegetable broth
1 cup fresh salsa
1/4 teaspoon ground oregano
1/4 teaspoon chili powder
1 onion chopped
fresh lime squeezed in
Reserve 1 cup of beans in a separate bowl, place remaining beans, vegetable broth and salsa in a blender. process until smooth, then pour into a sauce pan. Add reserved beans to mix. Cook over medium heat and add in other ingredients.
We topped our soup with fresh avocados and tomatoes. You can also add sour cream ( or greek yogurt as a replacement)
The second recipe we tried was Creamy Cauliflower Sauce over wheat noodles
5-6 cups cauliflower florets
8 Large garlic cloves, minced
2 tablespoons butter
6-7 cups vegetable broth
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup milk
1. Garlic- saute minced garlic with butter in large skillet. Cook for several mins or until soft.Remove from heat and set aside
2. Cauliflower- Bring water and vegetable broth to a boil. Add the cauliflower and cook until soft. Do not drain
3. Puree-Use spoon to transfer cauliflower to a blender, Add 1 cup vegetable broth, sauteed garlic/butter, salt, pepper, and milk. Blend until smooth
Both of these recipe we so fast and easy to make. We loved both, but I have to say we went crazy over how delish the Cauliflower sauce was. So extremely healthy and good. It was so light on your belly. I could eat it everyday. Both dishes are a must try!!
